The olive groves on our farm.

The Fabio farm covers 130 hectares, a large portion of which is covered in coppice woodland, alternating with olive groves, pastures, and clearings. Its location creates a unique microclimate, ideal for olive growing. Four new specialized olive orchards have been built, and we currently have approximately 2,000 trees in production. Throughout the rest of the farm, olive trees scattered across terraces bordered by dry stone walls bear witness to the harsh and complex agriculture of times gone by. We produce an organic extra virgin olive oil.

The olive groves maintain natural grass cover to promote soil biodiversity and encourage the presence of beneficial organisms. Soil tillage is kept to a minimum, and only green manure crops are sown, thus reducing the need for additional fertilization.

From harvest to table.

Our olives, hand-picked from late October to late November, are delivered to the certified organic mill on the same day they are harvested, preserving the olives' precious organoleptic qualities.

The company's other activity is the cultivation of organic vegetables, which pair beautifully with our extra virgin olive oil.

A small farmyard animal farm complements our operations, always providing fresh eggs daily.
